खाद्य संघटक और स्रोत
संघटक : भोजन बनाने के लिए हमें कई चीजों की आवश्यकता होती है | जैसे- कच्ची सब्जियाँ, नमक, मसाला, तेल और पानी आदि | इन्हें ही संघटक कहते हैं |
खाद्य पदार्थों के स्रोत : जिन-जिन चीजों से हम अपना भोजन प्राप्त करते हैं उन्हें ही खाद्य पदार्थों का स्रोत कहते है |
हम खाद्य पदार्थ दो स्रोतों से प्राप्त करते हैं |
(i) पौधों से प्राप्त खाद्य पदार्थ : गेंहूँ, दाल, चावल, मक्का, सब्जी और वनस्पति तेल इत्यादि |
(ii) जन्तुओ से प्राप्त खाद्य पदार्थ : उदाहरण - अंडा, मांस, दूध, दही, मछली और पनीर इत्यादि |
कच्ची सामग्री : खाद्य पदार्थों को बनाने के लिए जिन संघटकों का हम प्रयोग करते है, उन्हें कच्ची सामग्री कहते है | जैसे - नमक, दाल, सब्जी, पानी और मसाला इत्यादि |
पौधों के खाने योग्य भाग : कुछ पौधों के दो या दो से अधिक भागों को खाया जाता है, इन्हें ही खाने योग्य भाग (edible part) कहा जाता है | जैसे - जड़, तना, फल, फुल, पत्ता इत्यादि ये सब खाने योग्य भाग होते हैं |
पौधे के भाग :
जैसे-
(i) आलु का तना खाया जाता है |
(ii) मुली का जड़ और पत्ता दोनों खाया जाता है |
(iii) लौकी का फल खाया जाता है |
(iv) पालक का पत्ता खाया जाता है |
अंकुरण : बीज से शिशु पौधे का उगना अंकुरण कहलाता है |
(i) मुंग का अंकुरण
(ii) चने का अंकुरण
अंकुर (sprout) : अंकुरित बीजों से एक सफ़ेद रंग की धागे जैसी संरचना निकलती है जिसे अंकुर कहते हैं |
मकरंद (नेक्टर) : मधुमख्खियों द्वारा इक्कठा की गयी फूलों के मीठे रस को मकरंद (नेक्टर) कहते है जो बाद में शहद बन जाता है |
मधुमक्खियाँ मकरंद (नेक्टर) का भण्डारण करती है क्योंकि :
फुल और उनका मकरंद, वर्ष के केवल कुछ समय में ही उपलब्ध् होते हैं। अतः
मधुमक्खियाँ इस मकरंद का भंडारण कर लेती हैं ताकि पूरे वर्ष इसका उपयोग किया जा सके।
भंडारित शहद को मधुमक्खियाँ भोजन के रूप में प्रयोग करती हैं |
खाद्य पदार्थों के ग्रहण करने के आधार पर जंतुओं के प्रकार:
1. शाकाहारी
2. मांसाहारी
3. सर्वाहारी
शाकाहारी : वे जंतु जो केवल पादप या पादप-उत्पाद खाते हैं वे शाकाहारी कहलाते हैं | जैसे - गाय, हिरण, भैस और खरगोस आदि |
मांसाहारी : वे जंतु जो केवल जंतु या जंतु-उत्पादों को ही खाते है उन्हें मांसाहारी कहते है | जैसे शेर, बाघ आदि |
सर्वाहारी : वे जंतु जो पादप और जंतु दोनों को खाते है वे सर्वाहारी कहलाते हैं | जैसे मनुष्य, कौवा आदि |
